Maria always wanted to make something special for her husband. On their wedding anniversary, she decided to make homemade pastéis de nata for the first time. They were his favourite dish since childhood, when his grandmother made them every Sunday in a small kitchen in Belém.

"I'm going to make his grandmother's recipe," she said to herself, as she opened an old cookery book. The pages were yellowed and full of pencil notes. Making puff pastry seemed difficult, but Maria was not afraid of difficult things.

She started in the morning. The first attempt was a disaster. The dough became too hard and the cream too liquid. "I can't make this," she murmured, frustrated. But she read the recipe again and understood the mistake: she had to use very cold butter.

A segunda tentativa foi muito melhor. A massa ficou folhada e o creme ficou espesso e amarelo.

The second attempt was much better. The dough became flaky and the cream thick and yellow. "Well, I already know how to make the dough and the cream," she said with a smile. The secret was cold butter and lots of patience.

When her husband arrived home in the late afternoon, the kitchen smelled of cinnamon and caramel. "What did you make?" he asked, amazed by the wonderful smell. "I made pastéis de nata!" Maria replied, proudly. "They're your favourite recipe!"

Ele provou um e fechou os olhos. "São deliciosos. Como soubeste fazer tão bem?" Maria riu.

He tasted one and closed his eyes. "They're delicious. How did you know how to make them so well?" Maria laughed. "With love, patience and your grandmother's recipe. I'll make more next anniversary." And so a new tradition began: pastéis de nata made at home, with love, every year.
