O Sabor da Memória

A Inês tinha vinte e seis anos e morava num apartamento pequeno no Bairro Alto, em Lisboa. Naquele sábado de novembro, enquanto chovia lá fora, ela abriu a gaveta da cozinha e encontrou um caderno velho com a capa azul. Era o caderno de receitas da avó Lurdes, que tinha morrido três anos antes. Ao vê-lo, lembrou-se imediatamente do cheiro a canela e açúcar que perfumava a cozinha da avó.

Inês was twenty-six and lived in a small flat in Bairro Alto, Lisbon. On that November Saturday, while rain fell outside, she opened a kitchen drawer and found an old notebook with a blue cover. It was Grandmother Lurdes's recipe book, who had died three years earlier. Seeing it, she immediately remembered the smell of cinnamon and sugar that used to fill her grandmother's kitchen.

A Inês folheou o caderno com cuidado. A letra da avó Lurdes era pequena e inclinada, e algumas páginas estavam manchadas de gordura e farinha — marcas de receitas muito usadas. Lembrava-se de ter passado tardes inteiras naquela cozinha em Coimbra, a ver a avó trabalhar com gestos rápidos e seguros, a cantar baixinho músicas antigas.

Inês leafed through the notebook carefully. Grandmother Lurdes's handwriting was small and slanted, and some pages were stained with fat and flour — marks of well-used recipes. She remembered spending whole afternoons in that kitchen in Coimbra, watching her grandmother work with quick, confident movements, softly singing old songs.

Naquele dia, a Inês decidiu fazer o bolo de mel que a avó preparava todos os natais. Telefonou para a mãe para lembrar os ingredientes que não estavam escritos claramente. — Mãe, lembras-te de quanto mel a avó Lurdes punha no bolo? — Lembro, sim — respondeu a mãe com uma voz suave. — Era uma chávena cheia, nunca menos. E ela lembrava-se sempre de juntar umas raspas de laranja no fim.

"Mum, do you remember how much honey Grandmother Lurdes put in the cake?" "I do remember, yes," replied her mother in a soft voice. "It was a full cup, never less. And she always remembered to add some orange zest at the end."

Enquanto reunia os ingredientes, a Inês foi lembrando histórias da infância. Lembrava-se do dia em que a avó lhe ensinou a diferença entre farinha com fermento e sem fermento, e ela tinha confundido os sacos e o bolo ficara achatado. A avó rira tanto que lágrimas lhe escorreram pelo rosto.

While gathering the ingredients, Inês kept remembering stories from childhood. She remembered the day her grandmother taught her the difference between self-raising and plain flour, and she had mixed up the bags and the cake came out flat. Her grandmother had laughed so much that tears ran down her face.

Ao misturar a massa, lembrou-se também da voz da avó a dizer que cozinhar era como escrever cartas: era preciso pôr alma naquilo que se fazia, senão as pessoas sentiam que estava vazio. Essa frase ficara guardada na memória da Inês como se tivesse sido dita ontem.

While mixing the batter, she also remembered her grandmother's voice saying that cooking was like writing letters: you had to put soul into what you did, otherwise people would feel it was empty. That phrase had stayed in Inês's memory as if it had been said yesterday.

O cheiro do bolo a cozer encheu o apartamento. A vizinha da Inês, a D. Fernanda, bateu à porta com curiosidade. — Lembro-me desse cheiro! — exclamou a D. Fernanda. — A minha mãe também fazia bolo de mel. É um cheiro que nunca se esquece.

The smell of the cake baking filled the apartment. Inês's neighbour, Mrs Fernanda, knocked at the door with curiosity. "I remember that smell!" exclaimed Mrs Fernanda. "My mother used to make honey cake too. It's a smell you never forget."

As duas mulheres ficaram na cozinha a conversar enquanto o bolo arrefecia. A D. Fernanda lembrou uma história sobre a sua própria avó, e a Inês ouviu com atenção. Lembrar os que já partiram era uma forma de os manter presentes, pensou ela. Enquanto se lembravam, essas pessoas continuavam de alguma forma a existir.

The two women stayed in the kitchen talking while the cake cooled. Mrs Fernanda remembered a story about her own grandmother, and Inês listened attentively. Remembering those who had gone was a way of keeping them present, she thought. As long as they remembered, those people somehow continued to exist.

À tarde, a Inês ligou uma chamada de vídeo com a família. A mãe, o pai e a irmã mais nova estavam todos juntos em Coimbra. Ao ver o bolo no ecrã, a mãe da Inês ficou com os olhos húmidos. — Lembras-te de quando fazíamos isto com a avó? — perguntou a irmã. — Lembro-me de tudo — respondeu a Inês. — Por isso o fiz hoje.

"Do you remember when we used to do this with grandmother?" asked her sister. "I remember everything," replied Inês. "That's why I made it today."

A Inês cortou uma fatia e fotografou-a para o caderno digital que estava a criar — uma cópia moderna do caderno da avó, para que as receitas não se perdessem. Queria que os seus filhos, quando os tivesse, se lembrassem da avó Lurdes através dos sabores, mesmo nunca a tendo conhecido.

Inês cut a slice and photographed it for the digital notebook she was creating — a modern copy of her grandmother's book, so the recipes would not be lost. She wanted her children, when she had them, to remember Grandmother Lurdes through flavours, even if they had never known her.

Nessa noite, ao deitar-se, a Inês folheou de novo o caderno azul. Lembrava-se agora de receitas que julgava ter esquecido: o caldo verde de domingo, os pastéis de bacalhau das sextas, o arroz-doce do aniversário. Cada página era uma memória guardada em papel.

That evening, as she was going to bed, Inês leafed through the blue notebook again. She now remembered recipes she thought she had forgotten: the Sunday caldo verde, the Friday salt-cod fritters, the birthday rice pudding. Each page was a memory preserved in paper.

Lembrar não dói, concluiu a Inês. Pelo contrário — lembrar aquece. É preciso que as novas gerações se lembrem das antigas, não por obrigação, mas porque nisso está guardada uma parte da alma de quem somos. Fechou o caderno, apagou a luz e dormiu com o sabor do mel ainda na boca.

Remembering doesn't hurt, Inês concluded. On the contrary — remembering warms you. New generations need to remember the old ones, not out of obligation, but because within that memory lies a part of the soul of who we are. She closed the notebook, turned off the light, and slept with the taste of honey still in her mouth.
